Cake Mix
75g butter,
softened
75g golden
caster sugar
½ tsp vanilla extract
1 medium egg,
lightly beaten
75g self raising flour
10g cocoa powder
zest of ½ orange
orange liquor, optional
Topping
20g caster sugar
zest of 1 orange
150g dark chocolate
70% cocoa content
50g white chocolate
TO MAKE THE CAKE POPS
1.
Preheat oven to 160°C.
2.
Cream together the butter and sugar until
pale and fluffy.
3.
Stir the vanilla extract into the beaten egg,
then add it to the butter mix bit by bit until
fully incorporated.
4.
Fold in the flour, then divide the mix in two.
Fold the cocoa powder and orange zest into
one of the mixes then spoon both mixes into
separate piping bags.
5.
Rinse your cake pop moulds, pipe a small dot of
the vanilla sponge in the bottom of the mould
without the hole, then pipe a dot of the chocolate
mix directly on top, continue until the mould is just
shy of the top of the shape then
close firmly and bake for
10-12 minutes.
6.
Remove from the oven
and allow to cool for a
couple of minutes before
turning out and leaving
to cool completely.
7.
When cool, brush
with orange
liquor if using.
TO DECORATE
1. Rub the sugar and zest together in a bowl until fully incorporated.
Spread on a tray and allow to dry out, the longer the better as the
sugar will dry out the zest. Once dry, pour into a food processor and
blend the sugar to make it super fine.
2. Melt the dark chocolate in a bowl over simmering water, when melted dip
the tips of the sticks into the chocolate then insert into the cakes around
2/3 of the way through. Use the moulds to stand them in and place in
the fridge or freezer to set the chocolate and secure the stick.
3. When set, dip the cake pops into the melted dark chocolate
and twirl to ensure full coverage and no drips then put in the
fridge or freezer to set, repeat with the others.
4. Melt the white chocolate in the same way as the dark
chocolate and put into a piping bag, cut a very small
piece from the tip of the bag to allow you to draw
a very thin line of white chocolate over your
cake pops, decorate how you like with the
white chocolate.
5. While the white chocolate is still wet,
sprinkle over the orange sugar,
which will stick to it. Put back in
the fridge or freezer to set
before serving.
